Chicken Fajitas



– 2 tbsp fresh squeezed lime juice
– 2 tbsp olive oil
– 1 large garlic clove, minced
– 1 1/2 tsp ground cumin
– 1 tsp salt
– 1/2 – 1 tsp chili (adjust to your desired spice preference)
– 1tbsp fresh chopped cilantro (optional)
– 1 1/2 pounds chicken thighs
– 3 large bell peppers, cut into strips
– 1 red onion, thinly sliced
– 2 avocados


1. In a large bowl, combine lime juice, olive oil, garlic, cumin, salt, chili, cilantro; mix together
2. Add the chicken thighs and if time allows, marinate for 30 min
3. Heat a large skillet pan. Add a drizzle of olive oil. Sear the chicken thigh on both sides until golden, charred and cooked right through
4. Transfer chicken, add the peppers and onion to the skillet and cook to your liking. Season with salt and pepper.
5. Slice chicken into strips
6. Serve as is. Serve with tortilla or lettuce wrap then add cilantro and avocados
