Low Carb French Toast

PREP TIME: 1 hour
COOK TIME: 10 minutes
SERVINGS: 12 slices.


For The Bread:
4 tbsp coconut flour
⅔ cup almond flour
1 tsp baking powder
2 tbsp monk fruit sweetener
½ cup non-dairy milk
¼ cup coconut oil
4 eggs

For the Egg Mixture:
4 eggs
½ cup non-dairy milk
1 tsp vanilla
2 tsp cinnamon
Butter or coconut oil to grease the pan


1️⃣ Preheat oven to 350 degrees.
2️⃣ In a medium-size bowl, whisk together coconut flour, almond flour, baking powder, and monk fruit. In a separate small bowl, mix together rest of ingredients,
3️⃣ Add wet ingredients to dry ingredients and whisk until a smooth batter is formed.
4️⃣ Pour into small loaf pan and bake for 45-60 minutes, until a toothpick inserted in centre comes out clean. Let cool completely before making french toast.

For the Egg Mixture:
1️⃣ Mix all ingredients in a large but shallow bowl.

How To Make

1️⃣ In a set a frying pan over medium heat and melt butter/coconut oil in pan to coat bottom.
2️⃣ Cut the pre-baked and cooled bread into slices(as if you bought a pre-sliced loaf) about ½” thick.
3️⃣ Dip each slice in egg mixture, coating both sides, and immediately put on hot and greased pan.
4️⃣ Cook each side 2-3 minutes or until each side is browned.
5️⃣ Enjoy warm and top with roasted coconut butter (like we did!), sugar-free syrup, or cinnamon.
